Ingredients

  • 2 cups Thin Rice Poha
  • 1/2 cup Coconut Water
  • 3 tablespoons Lemon Juice
  • Salt to taste
  • 1 teaspoon Powdered Sugar
  • 1 cup Coconut freshly grated
  • 3/4 cup Tomatoes finely chopped
  • 3/4 cup Red Onions finely chopped
  • 2 teaspoon Green Chillies finely chopped
  • 5-6 Curry Leaves
  • 1/4 cup Peanuts
  • 4 teaspoons Metkut
  • 1 teaspoon Mustard seeds
  • 2 pinches Asafoetida
  • 2 pinches Turmeric
  • 2 tablespoons Vegetable Oil

Tools

  • Pan
  • Spatula

Steps

  • Spread the Poha in a plate and add salt, sugar, coconut water, lemon juice and freshly grated coconut. Mix properly and let the Poha soak in for 10 minutes. Set aside.
  • Heat the oil in a pan. Add mustard seeds and let them crackle. Then add asafoetida and turmeric.
  • Add chillies, curry leaves to oil and add onions, tomatoes and peanuts each after a minute in that order. Make sure to saute well after you add each. Turn the heat off right after adding the peanuts
  • Add metkut to the Poha and mix well and then add the mixture of onions, chillies etc. to the Poha and mix again.
  • Serve in a plate and garnish with more freshly grated coconut and cilantro.

Tips

The Pohas need to be moist but not soggy so make sure you add the water carefully. If Metkut is not readily available you can always skip it. You can find it easily in Maharashtra but it may be harder to find it elsewhere. You can make it at home too. I will post a recipe for that.
